This Vegan Carrot-Coconut Soup is loaded with the subtle sweetness of carrots, richness from coconut, and gorgeous sharp, piquant undertones of lemongrass. The broth is perfect for ladling over your favorite noodle!
This soup uses a stir-in lemongrass paste which you can usually find in your grocery’s produce aisle. You can use fresh lemongrass too! Lightly crush it with your knife, and discard it before blending the soup. Want to make it? Click the link below for the recipe!
