Happy Wednesday. Today, I have a new vegan recipe + a new plant-based product review! Let’s dig in.
Weekly Update
Today’s recipe is one I can’t get enough of. It starts with a bold flavor trifecta of capers, sun-dried tomatoes, and lots of tomato paste to create a rich, deeply savory base. Add spicy Calabrian chili peppers and plenty of garlic to the mix, and you have a vegan tomato sauce that you won’t want to stop eating. Honestly, I almost didn’t even need to add the pasta; I could have just eaten the stewy, spicy chickpeas as-is with a big hunk of crusty bread. So perfect!
This week, I have lots of new product reviews lined up, and I think I want to work on perfecting my vegan upside-down cake recipe. More to come soon.
