Happy Sunday! Iβm working on tons of new vegan recipes for the site, plus a downloadable meal pan for Veganjuary! In the meantime, I have a new recipe for a gorgeous Chickpea Piccata Sauce.
The beauty of this recipe is in its simplicity and its versatility.
The sauce needs just a handful of ingredients, including chickpeas, onion, capers, plant-based butter, and lemon juice. From there, it can be served in so many different ways. Here are a few of my suggestions
Over pasta, as pictured above; try it with fettuccini or pappardelle!
With roasted or grilled veggies; try it piled atop charred cauliflower steaks!
Mixed into white rice or risotto; pile it on top of your next vegan risotto!
