Happy Tuesday! Today, I have a new vegan recipe that was born out of a mistake, but it’s so good that I just had to share it. This five-ingredient cauliflower curry purée is perfect served with basmati rice but would be delicious with crispy chickpeas piled on top.
Use your favorite curry powder or a hot Punjabi masala like I did. The result is a velvety, lush purée that tastes amazing with a few extra hot chilies and fresh cilantro.
